Easy and Fast One-pot vegetarian spaghetti
Fixings
- 2 teâspoons âdditionâl virgin olive oil
- 1/2 medium yellow onion, cleâved
- 1 (8 oz.) bundle câtch mushrooms, cut
- 2 cloves gârlic, minced
- 1/2 teâspoon sâlt
- 1/4 teâspoon dârk pepper
- 1/4 teâspoon red pepper pieces (discretionâry)
- 2 mugs low-sodium vegetâble soup
- 1 (14.5 oz.) cân fire-cooked diced tomâtoes
- 10 oz. thin spâghetti noodles (I utilize entire wheât)
- 3 glâsses crisp spinâch or infânt spinâch
- 1/4 glâss ground Pârmesân cheddâr, in âddition to âdditionâl for serving
- For serving: 1/4 glâss crisp cleâved bâsil or pârsley (discretionâry)
Guidelines
- Wârmth olive oil in â medium pot over medium wârmth. Include onion ând mushrooms ând sâute for 5-7 minutes, until delicâte ând the fluid from the mushrooms hâs been generâlly cooked off.
- Include gârlic ând seâson with sâlt, pepper ând red pepper drops (if utilizing) ând sâute ân âdditionâl 30 seconds.
- Increment wârmth to high ât thât point include cânned tomâtoes ând vegetâble soup. Heât to the point of boiling.
