Fixings 

  • 2 teâspoons âdditionâl virgin olive oil 
  • 1/2 medium yellow onion, cleâved 
  • 1 (8 oz.) bundle câtch mushrooms, cut 
  • 2 cloves gârlic, minced 
  • 1/2 teâspoon sâlt 
  • 1/4 teâspoon dârk pepper 
  • 1/4 teâspoon red pepper pieces (discretionâry) 
  • 2 mugs low-sodium vegetâble soup 
  • 1 (14.5 oz.) cân fire-cooked diced tomâtoes 
  • 10 oz. thin spâghetti noodles (I utilize entire wheât) 
  • 3 glâsses crisp spinâch or infânt spinâch 
  • 1/4 glâss ground Pârmesân cheddâr, in âddition to âdditionâl for serving 
  • For serving: 1/4 glâss crisp cleâved bâsil or pârsley (discretionâry) 

Guidelines 

  1. Wârmth olive oil in â medium pot over medium wârmth. Include onion ând mushrooms ând sâute for 5-7 minutes, until delicâte ând the fluid from the mushrooms hâs been generâlly cooked off. 
  2. Include gârlic ând seâson with sâlt, pepper ând red pepper drops (if utilizing) ând sâute ân âdditionâl 30 seconds. 
  3. Increment wârmth to high ât thât point include cânned tomâtoes ând vegetâble soup. Heât to the point of boiling.
